Great Healthy Recipes

I recently heard of a great website for gluten-free cooking, and since trying a few of the recipes, I've realized it's for anyone that loves whole foods. There are also many vegan choices on there for those of you that don't eat dairy. I have tried both of the African soups and they were AMAZING - I find i'm drawn to flavorful dishes, and both of these were easy and very tasty. I turned down the heat so the kids could eat it as well. I've also tried a quinoa dish. Anyway, here is the link:

Simple Carrot Soup

Last night I needed to make a quick meal, and I was craving some soup. I saw a bag of organic carrots in the fridge, so I went with the 'carrot' theme. I made a really tastey Carrot Soup, and it was super simple. Kid's liked it too:

2 lb bag of organic carrots, peeled
pinch of curry
pinch of turmeric
pinch of cumin
1/2 cup of soy/almond/rice milk (whatever you have)
salt & pepper

Put the carrots and spices in a pot and add just enough water to almost cover them. Simmer until tender (about 20 min). Puree with a hand blender. Add the milk alternative and a splash of Bragg's liquid seasoning (optional). Blend again and adjust the salt to taste. Serve on it's own or with a dallop of plain yogurt or some crisp bread.

Documentary - "The Disappearing Male"

Last Night I watched an amazing documentary on CBC called 'The Disappearing Male'. This was a disturbing look at how the chemicals in our environment/plastics/cosmetics are leading to the decline in the number of males being born, and in male fertility. I strongly recommend that everyone watch this documentary to see what changes you can start to make to potentially improve this situation - it can be viewed online at 'The Disappearing Male'.

Increasing Veggie Intake

I'm always thinking about how to get more veggies into my own diet, as well as getting my family to enjoy it. We all get into ruts where our diets become stagnant with the 'same old thing'. That's when we need to talk to others and get inspiring ideas. Here's a few things i've tried recently to increase our veggie intake:
1. Veggie patties
I shred 1 large sweet potato, 1 zuchinni, 2 carrots, 1/2 onion and 2 cloves garlic in a food processor. Add spices of your choice (I used salt, pepper, 1 tsp turmeric, 1 tsp basil). Add 2 eggs and 1 cup spelt flour. This mixture should form into loose balls. Drop onto a hot pan with a little olive oil, flatten with a spoon to make 3 inch patties. Cook until golden and then flip (several minutes each side). These were delicious served warm with a dallop of plain yogurt.

2. Veggie Rice
Shred 2 carrots. chop 2 cups of spinach. Add these veggies to hot steamed brown rice (any grain will work), cover and let sit this will lightly wilt the veggies. serve warm as a side dish.

The key is to experiment with new things! There are hundreds of possibilities out there!
